Clos Apalta Winery
Vinification at the Clos Apalta Winery is conducted through an unusual and intriguing gravitational system via a series of descending levels - beginning with the reception of the grapes, which are de-stemmed by hand. Then, gravity pulls the fruit through to the second level where the fermentation process begins in wooden vats. In levels three and four the wine reposes for two years in French oak barrels before the final the blending and bottling stages.
